Mini SunButter Cookies


I can relate to people with various allergies and food intolerances, and I know it can be frustrating! I found a great slideshow about food allergy symptoms and I thought I would share it with you. Click on the link below to access it!


I have gluten sensitivity and I'm also allergic to peanuts, so discovering SunButter was an answer to my prayers. I decided I would make a batch of healthful SunButter cookies to celebrate my first month of a peanut-free life! This is a very simple recipe, but you can make it a bit more challenging by incorporating your creative skills to decorate these wonderful cookies.

Ingredients:

1 Cup SunButter
1 Cup Stevia Extract In The Raw
1 Large Egg
1 Tsp. Baking Powder

Preparation:

Preheat oven to 350°F. Mix ingredients in a food processor. Coat two baking sheets with cooking spray to prevent sticking. Scoop up mixture with a teaspoon and drop on baking sheets. Place in oven for approximately 8 minutes. Let cool... Enjoy!

  1. can you make these with peanut butter and regular sugar if there's no allergy to peanuts and it's what you've got on hand?

  2. Absolutely! That's the beauty of my recipes. They are versatile and you can customize them to your needs. For this one in particular, substitute SunButter for 1 cup of peanut butter and use 1 cup of regular sugar instead of stevia. Hope you enjoy these. Thanks for asking!

  8. To substitute the egg, just mix 1 tablespoon of flax meal with three tablespoons of warm water. Let it stand for 10 minutes. Voila!
