Honey Butterfly Pancakes


Personally, I think that honey and pancakes make a great combination. When I create gluten-free recipes that I use for baking, I usually incorporate honey into the mixture because it helps make the final product moist. Anyone who has experience with gluten-free baking can honestly say that some of the flours are extremely dry, which is why it's important to find something to restore moisture. Honey is an excellent option, and it also adds a sweet flavor to any recipe.

This morning I made some pancakes and my brother loved them! What can I say? Kids love pancakes, and so do I! These can be really fun to make, especially if you create some crazy shapes and sizes. This was my take on creative ways to make pancakes...

The recipe is quite simple and it doesn't involve a wide array of ingredients. To me, it's great finding ways to make delicious gluten-free meals that have a small list of ingredients (budget-friendly) and also easy enough to prepare in a small amount of time. I've included the guidelines below, now it's up to you to get creative!

Ingredients:

 1 Cup of Gluten Free Pancake Mix
 1 Cup of Reduced Fat Milk
 2 Large Eggs
 3 Tbsp. of Honey

Preparation:

Combine all ingredients in a bowl and mix thoroughly. Coat a large skillet with cooking spray to prevent sticking. Pour a small amount of the mixture into the skillet (medium/high heat). Cook until edges are hardened. Flip and cook until golden. Repeat until all of the mixture is used. Get creative and make something fun with these and drizzle some more honey... Enjoy!


Note: To make a butterfly, slice a grape into wedges. Rice flour also works very well, just in case you don't have gluten-free pancake mix.
