Pita Chips

There I was writing down this week's grocery list when I realized I had a full container of Sabra Classic Hummus in my refrigerator. I love Sabra products! They are naturally gluten-free and come in a variety of savory flavors. What better way to eat hummus than with pita chips, right? Here's the recipe...

Ingredients:

 2 Cups Brown Rice Flour
 2 Teaspoons Xanthan Gum
 2 Teaspoons Sugar
 1 Teaspoon Salt
 1 Cup Warm Water
¾ Cup Flax Meal (Divided)

Preparation:

Mix dry ingredients (flour, xanthan gum, sugar, and salt) in a large bowl. Pour water into the mixture and keep stirring while adding ½ cup of flax meal. Dust a clean working surface with remaining flax meal and divide dough into 10 pieces. Take each piece and roll it out (as if making pita bread). Heat a non-stick griddle to 300°F and place pitas until crisp. Once all pitas are done, slice to make pita chips... Enjoy!

Note: This recipe is also great for making pita bread. Just place pitas on griddle until golden instead of crisp and skip the slicing.
