Apple Cherry Spice Muffins

Last week I didn't really get the chance to post any recipes. I felt guilt. It was Sunday evening and I wanted to bake, so I grabbed some ingredients from the pantry and got to work. It had been a long day, a long week. It was time to greet the season. We took out decorations and placed pumpkin spice candles on our tables. That's when I realized I wanted to create a recipe using autumn spices. That's how I got inspired to make Apple Cherry Spice Muffins. I had a huge jar of Eden Foods Organic Apple Cherry Sauce in my refrigerator, and it was one of those ingredients I wanted to incorporate into the recipe. To be honest, I have never been a fan of applesauce, but the combination of apples and cherries was intriguing. Surprisingly, it added a nice touch to the recipe, making it unbelievably versatile. These muffins can be easily enjoyed as a quick snack, breakfast, or dessert by adding a scoop of vanilla ice cream. The possibilities are endless...

Ingredients

 1 ¼ Cup Gluten-Free All Purpose Flour
½ Cup Gluten-Free Rolled Oats
¾ Cup Granulated Stevia
 1 ½ Teaspoon Baking Powder
½ Teaspoon Xanthan Gum
½ Teaspoon Nutmeg
¼ Teaspoon Salt
 1 Teaspoon Cinnamon
 1 Cup Eden Foods Apple Cherry Sauce
½ Cup Melted Fat Free Butter
 2 Large Eggs

Preparation:

Mix dry ingredients in a large bowl (flour, oats, stevia, baking powder, xanthan gum, nutmeg, salt, and cinnamon). Add apple cherry sauce, melted butter, and eggs. Mix thoroughly. Line a muffin tin with baking cups and evenly divide the mixture. Bake at 350°F for 70-80 minutes or until inserted toothpick comes out clean. Serve... Enjoy!

Makes 12 Muffins

Note: Stevia can be substituted for regular sugar if you prefer. Same goes for the butter.

    sure it's available in Canada, but I'm going to look into it. Yum!

  3. Apple cherry sauce, that is a new one for me! I will need to seek that out, I am sure it lends a wonderful flavor to baked goods. Your spice muffins look delicious-Yum!
