2 Large Eggs
2 Tsp. of Baking Powder
2 Tsp. of Vanilla Coffee Blend
2 Tsp. of Vanilla
1 Cup of Lundberg Hot Rice Cereal
½ Cup of Reduced Fat Milk
⅓ Cup of Flax Seeds
¼ Cup of Powdered Sugar
Preparation:
Preheat oven to 350°F. Place rice cereal, flax seeds, and ground coffee in a food processor. Mix in a bowl with baking powder, eggs, vanilla, and milk. Coat a square pan with cooking spray to prevent sticking. Pour mix into pan and place in oven for approximately 30 minutes. Cut into bite-sized squares and sprinkle powdered sugar. Store in refrigerator.
Makes 25 Squares.
