Rosemary Grape Focaccia

Happy weekend to all! Saturday nights are usually the time to spend with family and friends... and surrounded by savory food! I've been wanting to create something with grapes, so I made Rosemary Grape Focaccia! The texture is really distinct when compared to your average focaccia, but it has a wonderful taste. Rosemary truly compliments the sweet flavor of grapes! I'm planning on using pizza crust mix next time around so that the texture is more like a traditional focaccia. This was just an experiment and my goal is to take this delicious recipe to a whole new level. Looking forward to it...

Ingredients:

2 Medium Potatoes
1 Tsp. of Salt
1 Tsp. of Rosemary
2 Tsp. of Baking Powder
1 Cup of Water
1 Cup of Red Seedless Grapes
1 Cup of Rice Flour
1 Large Egg
3 Tbsp. of Olive Oil
3 Tbsp. of Honey

Preparation:

Scrub and peel potatoes. Bring water to a boil in a medium saucepan and add potatoes. Boil for 20-25 minutes. Preheat oven to 350°F. Remove potatoes from saucepan and let cool for 5 minutes. In a bowl, mash potatoes and mix with remaining ingredients (except for the grapes). Coat a round pan with cooking spray to prevent sticking. Pour mixture into the pan and place in the oven for 10 minutes. Remove pan from the oven and press in the grapes. Place in the oven again for 20 minutes and an additional 5 minutes on broil (make sure the focaccia doesn't burn). Slice into 8 pieces... Enjoy!


Note: To make mixture less liquid, use ¾ cups of water instead of a full cup.

  1. This focaccia is so different than what I new up to now. It really looks tasty!!

  2. Some of the ingredients make it focaccia-like, but it's really different in texture given the fact that I used potatoes and rice flour to make it gluten-free. It was really tasty and I hope you try it!!!!
