Sweetheart Toaster Pastries


For years I have been searching for gluten-free Pop-Tarts. These toaster pastries are among the most craved foods by people with gluten sensitivity and Celiac Disease. For this reason, I came up with a delicious recipe for these that is a lot healthier and has a delightful taste. Instead of making rectangular toaster pastries, I made round ones using a cookie cutter. These are a great tool and I use them for many of the recipes in which I have to use dough. Rectangular or round, add some of your favorite preserves and these toaster pastries will rock your world!

Ingredients:

 1 Cup King Arthur Gluten-Free Multi-Purpose Flour
 1 Large Egg
½ Cup Fat Free Butter
 3 Tablespoons Sugar
¼ Cup Water
 1 Cup Flax Meal
¼ Cup Jam or Preserves

Preparation:

Preheat oven to 400°F. In a large bowl, combine flour, egg, butter, and stevia. Add water slowly while stirring the mixture. Dust a clean working surface with some flax meal and begin to knead the dough. Keep adding remaining flax meal while still kneading. Roll out the dough and use a round cookie cutter (or a knife for rectangles) to make at least 7 pairs of round (or rectangular) pieces. Once all dough has been used to make pieces, divide jam or preserves evenly among pairs. Place ½ tablespoon of jam or preserves on top of one piece, placing the other piece on top and using a fork to press on the edges. Coat a baking sheet with cooking spray to prevent sticking and arrange pastries on sheet. Place in preheated oven for approximately 20 minutes. Remove from oven and let cool for a few minutes... Enjoy!

Makes 7 Pastries.

Note: I used stevia instead of sugar and fat free butter to make the recipe healthier, but you can choose to use regular ingredients.
