Strawberry Coconut Shortcakes


Is it too early for Halloween themed sweets? Nah... Surprisingly, I have never made strawberry shortcakes before! I whipped up this recipe to share with you and I truly hope you enjoy giving it a try. These shortcakes are delicious, and the unconventional flavor combinations add a nice twist to a traditional dessert dish! In my opinion, these make for a great Halloween party treat!

Strawberry Coconut Shortcakes
Yield: 12 servings
Gluten-Free, Rice-Free, Corn-Free

For the cupcakes
1 ¼ cups coconut flour
¾ cup dark brown sugar
2 teaspoons baking powder
½ teaspoon salt
¾ cup vanilla coconut milk
¾ cup vegetable oil
2 eggs, beaten
2 teaspoons almond extract

For the topping
12 fresh strawberries, sliced
whipped cream

Preheat oven to 350ºF. Whisk together coconut flour, sugar, baking powder, and salt in a large bowl. Add remaining ingredients and mix thoroughly until crumbly. Divide mixture evenly into 12 baking cups and press into even layers. Bake for 15 to 30 minutes or until firm and golden. Remove from oven and let cool completely. Top with strawberries and whipped cream.
