What better way to end the work week than baking some Banana Spice Cupcakes? I thought so too, which is why I made some with swirled Cream Cheese Frosting on top. The reason why I wanted to end the week with a cupcake recipe is because my goal is to put a hold on baking desserts and sweets (until October that is!). I'm shifting my focus to other recipe categories (appetizers, lunch, dinner, etc.). You can't have a healthy dessert after dinner without having dinner first, right? Well, you get the idea.
Additionally, I wanted to tell you guys that I will be resuming my running routine. I have to admit I haven't been as physically active as I would like to be. About two months ago, I was on a hectic schedule due to college finals. I felt relieved when Freshman year was finally over and couldn't wait for a break. During those vacation days I really got into blogging. I had done blogging before, but never like this! It has officially become a permanent part of my life. I can't think of anything else to do with my spare time. I create recipes, prepare them, take pictures, and then blog. That's what most of my free days look like (other free days consist mainly of sleeping and watching TV). So anyway, that's my plan! Study, run, blog, sleep... Sounds like a good plan, eh? Here's a recipe for some delicious cupcakes to celebrate the coming of autumn. Feel free to add some crushed walnuts to the recipe (I didn't because I'm not supposed to eat them!).
Banana Spice CupcakesIngredients:
1 Package Namaste Foods Spice Cake Mix
¾ Cold Water
3 Ripe Bananas (Mashed)
3 Large Eggs
Preparation:
Mix all ingredients thoroughly in a large bowl. Evenly divide mixture among 16 baking cups. Bake at 350°F for approximately 30 minutes or until toothpick comes out clean. Let cool and swirl with Cream Cheese Frosting... Enjoy!
Makes 16 Cupcakes.
Note: You don't necessarily have to use Cream Cheese Frosting to top these cupcakes. Vanilla frosting also works very well with the recipe.
Cream Cheese Frosting
Ingredients:
8 oz Reduced Fat Cream Cheese
1 Cup Sugar
1 Teaspoon Vanilla Extract
Preparation:
Place cream cheese in a bowl and microwave for 35 seconds to soften. Add sugar and vanilla extract. Mix thoroughly and place in the refrigerator for 10 minutes or until ready to use... Enjoy!
Note: I used stevia instead of sugar, but feel free to use any kind and adjust to flavor.

I enjoy banana and with spice it will taste great. Love the presentation and swirl is so neat and perfect.
