Chocolate Chip Almond Muffins


Earlier today, a reader requested a recipe for gluten-free chocolate chip muffins and I was able to develop an easy way to do these. All you'll need are the ingredients below...


Ingredients:

 2 Large Eggs
 1 Cup of Natural Almonds
 2 Tsp. of Vanilla Extract
 2 Tsp. of Baking Powder
¼ Cup of Brown Sugar
⅓ Cup of Rice Flour
½ Cup of Reduced Fat Milk
 5 Tbsp. of Chocolate Chips

Preparation:

Place almonds in a food processor and mix with all remaining ingredients in a large bowl. Preheat oven to 350°F. Pour mixture into a muffin tin (coat with cooking spray to prevent sticking) and place in the oven for approximately 25 minutes. Remove from the oven and let stand... Enjoy!
