2 Large Eggs
1 Medium Carrot
¼ Cup of Mozzarella Cheese
Preparation:
Crack eggs open into a small bowl and beat. Rinse carrot, peel into bowl, and mix. Add ground black pepper for a more flavorful experience (optional). Coat medium skillet with cooking spray to prevent sticking. Pour mix into skillet at medium/low heat. Once cooked, sprinkle mozzarella cheese and fold omelette. Serve with toast.
